The ubiquitous ramen is reputed as comfort food, but over here at The Tokyo Ramen, it’s elevated into a refined, elegant dish. The Tokyo Restaurant has opened its first pork-free, Japanese noodle restaurant to introduce authentic Tokyo-taste ramen to Japanese noodle fans and also to serve diners with special dietary requirements the soup base is made with locally-sourced kampong chicken.
This bowl of ramen soup is like consommé: a clear liquid gold that’s light yet complex and full of umami flavour. It’s made by boiling down locally-sourced kampong chicken, and kombu seaweed for a good 6 hours. Topping options include chicken char siu, its barbecued version, ajitama egg, nori seaweed and spring onions. Serve with a tare sauce concentrate to round out the flavour. It’s a simple bowl of Japanese noodle busting umami with a comforting twist.
