But first, let’s dig deep into the Yakiniku hype…

  • What is Yakiniku?

Originally a Korean dish, Yakiniku is the Japanese word for ‘grilled meat.’ (Yaki means grilled and niku is meat.)

Yakiniku restaurants are extremely popular in Japan. It’s an amazing dining experience where you’ll sit at a table with a grill in front of you, and you cook the meat the way you want it to be.

  • How does it work?

Most of the Yakiniku restaurants provide an all-you-can-eat option. The method of Yakiniku focuses on drawing out the natural flavour of the meat and with this, many cuts of beef do not come marinated or pre-seasoned to relish the natural flavour. A dipping sauce is also given to enjoy with the meat, and it adds a touch of extra to your tastebuds.

The dipping sauce for Yakiniku is divided into two preferences: tare (soy-based sauce) and shio dare (salt-based sauce). The quality of the sauce impacts the flavor of the beef; with that, there are a variety of sauces in accordance to how it is encouraged to be enjoyed.

  • Most popular types of cuts

Tongue
As the name says for itself, this cut is from the cow’s tongue. The root of the tongue is fatty and has a good amount of marbling. It is a common part used in Yakiniku.

Karubi/Kalbi (Boneless Ribs)
This cut comes from around the abdominal bones. It is known to be well-marbled and has a rich flavor. The cut is one of the most popular options at many Yakiniku restaurants.

Harami
This cut comes from the diaphragm muscle. It has a texture very similar to lean meat. It is tender and contains a good amount of fat, giving it a deep flavor.
